Croque Grand-mere

Today I tried something different for breakfast.  Normally on Sundays I make pancakes, but today I decided to make use of the two cast iron oval serving containers my brother got me for Christmas.

To make this you will need the following:

  • 1 slice of bread, cut in half
  • 1-2 eggs, beaten
  • Sprig of fresh thyme
  • 1 green onion
  • 1-2 strips of bacon
  • I slice of gouda

Dip the bread in a mixture of egg and thyme.  Place one slice of bread in the container, cover it with the slice of gouda and a strip of bacon (torn in half), then top it off with the remaining slice of bread.  Drizzle the rest of the egg mixture over the top, placed the green onion on top and baked at 350 degrees for 20 minutes.

Normally, Grandma doesn’t like cheese.  She finished her breakfast this morning and even gave me a hearty (and unsolocited)

“This is GOOD!”

Next time I’m going to incorporate some asparagus into the recipe.

    My mouth is watering! I made the hot chocolate pancakes for my kids last week, it was a hit. This will be next! Maybe someday you’ll write a cookbook!?
